On a trip to Mexico in 2010, veteran cooks Marc-André Leclerc and Hilary McGown realized something life changing: the food was amazing! Unlike any “Mexican” food available in Montreal, the food in Cabo San Lucas was fresh, light and delicious. This palate changing experience became a life changing event and led to the idea for Grumman 78, Montreal’s first taco truck.
Of course nothing worth doing is easy, and it didn’t take long before the duo had to face Montreal’s strict (and many have said out-dated) laws prohibiting street food. A taco truck that isn’t allowed to drive around selling tacos isn’t the best business idea in the world.
Never ones to back down from a challenge, Marc and Hil applied their creativity to the problem. “What if we keep the truck but sell our tacos at events?” they wondered. This small distinction was good enough for City Hall, and Montreal’s epicurean scene was forever changed. They brought on partner Gaelle Cerf, former manager par excellence of Au Pied de Cochon, and the trio hasn’t looked back since.
